Arizona in May
That is a very good ride and an ideal time to do it. It won't be blistering hot yet, although it may seem warm to you coming from up North.
With the exception of the Las Vegas/St. George UT areas, you will mostly be at higher altitudes (4000' and above) and will experience cool temps at night and early morning and nice riding throughout the day. If you can, try to see Monument Valley along the Utah/Arizona border.
