I've been considering loosing the rider floorboards and going to pegs on the Vaquero. Has anyone done this, is it even possible? If so, can you post a pic please?

Why go from floorboards to pegs ?

Biggest reason is I don't like having to step out to put my foot down, with pegs I just slide my foot off the back and down. I don't mind loosing the heal shifter, I never use it anyway. I had a Yamaha Stryker for a while and loved the peg location and seating position but the bike was just too small. I'm just researching the possibility of putting a similar riding position on the vaquero.

Haven't heard of anyone doing that. To each their own, but no way I'm giving up my floorboards!

On the 1600s you can remove the heel shifter while maintaining the toe shifter, but on the 1700s they are on the same piece. Tombstone cut the heel shifter off his bike for a similar reason
As far as removing the floorboard, I'd personally never do it to my bike.

I don't see any reason that you couldn't, it might mean a little fabrication on your part though. me personaly, I LOVE my heelshifter and floorboards.

I'm sure you could change the fronts over with a little work. Try taking the floor boards off the mount. You'll have to remove the spring and pin(retaining clip too). Then you can see how a peg would line up with the shifter and brake pedals. Or you might be able to adapt some of those forward controls to your bike.
I thought I'd miss the floorboards when I bought my ST1300, but in fact I like the pegs better. They are fairly broad with flat tops, and they are not as fat in front as those on the 1700s. Not sure how they would work with the 1700's seating position.
