For 2 days in a row I have gotten an email from the forum directing me to threads that it thinks I may be interested in. Is there a way to opt out of these mailings?

Hmm, you should have only received one email.

But yea instructions are at the bottom of the newsletter to opt out.

It says to go to the User CP to opt out. I don't see a spot that says opt out in the User CP.

User CP >> Edit Options >> Receive Email


Just a note.. we only really send out one newsletter per year, so it's not excessive amounts of email you'd be getting from us. But it might be in your best interest to keep receiving emails in case we have to notify you in a more serious matter, like updates on the site status (if it went down, etc.). Just a heads-up, but it's your choice.
