Why does the front start to drop so early?

Because the bike weighs almost 900 lbs.Not quite you current day moto cross bike.
Actually you can help keep the front up by staying on the gas while in the air, thats how the dirt bike guys and snowmobilers do it on jumps.

What Steve said + the floor boards are so forward that if you take your but off the seat it throws the balance forward.
