I tried some of that scrapple "what-ever-it-is" once. The only thing I can liken it to is a square of congealed bacon grease. Grits, compared to that "what-ever-it-is", is like manna from heaven!

Two completely different things. I never had scrapple, but from what I read, it reminds me of what my mom called head cheese. She used to cook pigs (boil?) heads, add spices and gelatin and put it in a baking mould, then refrigerate. I never ate it...I prefer what really is an irish breakfast...A rasher of bacon, eggs, toast, potatoes and if necessary, pancakes with real maple syrup, not the fake corn syrup crap perpetrated on people. sausage gravy over the potatoes is very good too.

I never partook in such culinary explorations. People ate all sorts of things at one time, liver, brains, eyes, kidneys, all sorts of disgusting crap. Greek and Italian food are my favorite though...

No real regional stuff I can recall, although my mom also used to make softshell crab. Bread and fry them, put it on a sandwich with tatar sauce. My dad's family was Italian, so they had their own culinary mojo happening. Best eggplant anywhere and I can't match it today.

In Iowa, the pork tenderloin sandwich is a source of local pride. Never had one until I moved out here. The pork and bacon are top notch here and the beef is good as well.

The two food stuffs I miss from NY are Pizza (most Italian food really) and fresh seafood.
