I wonder how close to 200 he could have got to if not for bouncing off the rev limiter. I was surprise at 180 he hit high gear and then 189 and done.... with plenty of revs left. 11K sounds like a cruise rpm!!!! these bikes are amazing...
back in my racing days a good handling bike at 180 was rather easy to do. Some of my other bikes 130 felt flat out dangerous.

When I was 14 my brother let me take his 750 triple for a spin.
 I got it up to 130 and it started tank slapping and didnt quit till I got back down to 60. That got my attention big time!!. After I told him what happend and he got done kicking the shit out of me. He installed 3 more steering dampers. It was a handful

That was actually suicidal... no doubt about it. Just a matter of time for a person like that to end it all... hopefully without hurting anyone else.
