Not really sure how best to help. Are you looking for advice on must see things, good roads? Want advice on whether to ride mostly in US or Canada? How much time do you have?

I have a few suggestions:
There are plenty of good roads around Rapid City for example: Iron Mountain Road near Mt Rushmore, Playhouse Road, Spearfish Canyon, Nemo Road.
If you can fit it in, the Beartooth Pass near Cody Wy is spectacular, as is Going to the Sun Road in Glacier National Park in NW Montana. You could also hit the ice fields in Jasper, Alberta.

I know there are other popular options in Idaho (such as LoLo pass), and Washington State if you want to go all the way to the coast.

I usually use google and have found MapQuest to be helpful.

I'd start real soon. Winter comes early in Fairbanks. You probably want some way to carry extra fuel. Gas stations on the way there can be few and far between.
