Here is a sample of a basic video done with a Drift HD camera. You could do a lot more with various camera angles and editing, but this gives you an idea of the quality.

I wonder how it is at highway speeds, like around 75mph.

The video is fine at highway speeds. Wind noise can be a problem, though, if you are just using the built-in microphone on the camera. This is solved if you use the Drift HD External Mic and place the mic out of the wind.

Seems to be a lot of curvature in the image. As in the tops of all the buildings, light poles, trees, etc on both sides lean in toward the center.

Yes, most of these cameras have a wide angle lens. The Drift HD has recording angle of 127° when shooting in 1080p, 170° in 720p or SD. At the wide angle you will see the curvature in the distance. The advantage is that you capture a lot of the view side to side.
